8 Salad Recipes To Eat When You Feel Seriously Disgusting

WE FINALLY MADE IT TO CHARLESTON. I’m so glad to be here. The sun is shining. The palm trees are blowing in the wind. We’re unpacking boxes. And I finally have my kitchen gear and supplies again!
I did my best to keep up with the plant-eating along the way here…in the hotels, at my in-laws, and in the weird cottage on the beach (it was like a room that Bob from Twin Peaks would hang out in). But not having my own kitchen (or at times, a kitchen at all) and my wellness necessities (hello, Vitamin D) made me feel a little off my game. Not as peppy. Not as glowy. And feeling just a little gross.
Now that I have my own kitchen again, all I want to do is eat mounds of fruits and veggies. Blend them. Roast them. Sauté them. And eat them raw in salads. SALADS. I missed my big salads. And now that I can make them again, I’ve rounded up some of the best ones from around the web that I can’t wait to make. Please share your favorites with me too!

It’s perfect timing because lately I’ve felt like bleh and its because I’ve been coming home and eating tortilla chips and salsa after an hour commute and then not having the spark to make actual food for dinner until like 8pm. Which leads me to eating a bowl or cereal or a grilled *cheese* (daiya). Smh. So thanks so much – this has given me some inspiration. xx

October 23, 2015Pataveia, I get in that rut too! Instead of chips and salsa…celery and almond butter. I just stand there with the fridge open and dip after dip and then don’t even feel like making dinner. Glad you liked these salads! They all look so good.

I discovered your blog in the strangest way. Scott, the guitar player from City in Colour or Alexisonfire (it was a few years ago), was the bartender of a local joint near me. I was throwing a Valentines Day dinner and my friends invited him over for it. He introduced me to your site that night when I told him I dabbled in vegan blogging.
