Babes In Plantland: Sarah Britton

You can’t use the word “babe” and “plants” and not mention Sarah Britton. She is the OG Babe In Plantland. Her site, My New Roots, is a mecca for whole-food tips and recipes. She’s the master of making good-for-you food approachable and exciting, with her beautiful photography and laid-back vibe.

Trained as a Holistic Nutritionist in Canada, she wasn’t able to practice legally when she moved to Copenhagen (her now home). Not knowing what to do next, she made a list of jobs that she wanted to try, and cooking was the top of the list. She had never formally cooked before, but was super determined. She knocked on every veg-restuarant door in the city. And soon after, she landed a job in one of them. Since then, the self-taught chef has led cooking classes around the world, was a Saveur Best Food Blog 2013 Finalist, and has appeared in numerous magazines, including Bon AppΓ©tit (twice). Pretty inspiring, right? So excited to have her here.

Turn ons: Any fresh greens, sweet potatoes, caramelized onions, lentil salads, sprouted almonds

Turn offs: Canned beans, overcooked asparagus and peas, seitan

What restaurant would you planticize: Pretty much any restaurant in Copenhagen. I love this city, but man, are they behind the times when it comes to plant-based food!

Dish you dream about: Quesadillas De Camote and Sopes from Gracias Madre

A travel tip for eating green on the road: Always bring food with you on the plane, train, road trip, etc. Being prepared makes all the difference to how you’ll feel during and after the trip, and you’ll never get caught having to eat sandwiches out of a vending machine. Hooray! I actually wrote a post all about this.
