Chipotle Mashed Potatoes With Greens + J. Q. Dickinson Salt-Works Friendsgiving Virtual Potluck (and a Giveaway!!)

When Renee Shuman of Will Frolic For Food asked me to be part of a Virtual Friendsgiving Potluck, the answer was…DUH. Not only is she the coolest (her photos are unreal), but I was really excited about my other virtual tablemates – beauties from Dolly & Oatmeal, The Faux Martha, and Bread and Barrow to name a few. And then she told me that we were all going to get to use J.Q. Dickinson Salt-Works in the recipe, and I was double DUH. I love everything about the brand. More on the salt in a minute, first let’s talk taters.

If you’ve been here before, you know that mashed potatoes are my thing. I had a complicated relationship with them in the past, but like first loves…they never really leave your heart. This year, I wanted to do something a little different. So I called on my pepper friend, the chipotle, for a little help.

Chipotle-Mashed-Potatoes

These potatoes are so creamy, dreamy, and delicious that you can serve them up to your non-planty friends and family at Thanksgiving and no one will complain (or even know they’re missing butter and cream). I like to use my food processor instead of an electric mixer. It makes the potatoes a little more smooth and there is a lot less swearing involved when your mixer’s not splattering almond milk everywhere. If chipotles aren’t your thing, skip them. They’ll work just as great without. I topped mine with some sautéed greens – spinach,  kale, or collards work best here.

Now the SALT. J.Q. Dickinson is OG. Owners Nancy Bruns and Lewis Payne are 7th generation salt makers who revived their business on the same land where their ancestor William Dickinson made salt over 150 years ago. 150 years! All of the salt is hand harvested with the help of the sun and a mountain breeze. Now this might sound like some storybook-fakey marketing talk. But it’s not. They’re the real deal. I watched this video of them making the salt and was blown away. I feel so lucky to be part of spreading the word on such a incredible company. More after the recipe…


{ Chipotle Mashed Potatoes } 
   
serves 4

3 giant potatoes (about 2 pounds), cut into chunks
1/2 cup cashews (soaked for a few hours)
1/2 cup unsweetened almond milk
1/2 cup vegetable broth
1/2 cup nutritional yeast
2 chipotle peppers (from a can)
Giant Pinch of Salt (J.Q. Dickinson in the house!)
Some Cracked pepper 

Boil potatoes in a large pot of water. While the potatoes are boiling, mix all other ingredients in a blender until smooth. Depending on the speed of your blender, this could take up to five minutes. 

Drain the potatoes and put in food processor with your cashew mixture (you can use the good old fashioned electric mixer if you prefer that). Blend away. Add more almond milk if you need to. Salt and pepper to taste. Serve them up!

    I would love to sit down with Oprah and eat fresh veggies from her garden and have her read out loud to me. That would be a dream come true.

    I have never heard of J.Q. Dickinson. I went straight to their website and want to be adopted by them.

    This recipe is so bomb dot com. I can’t wait to make it.

    A small percentage of dining with someone is eating. The conversation can turn a good meal into an unforgettable experience, something beyond tasting food and drinking a well-cared-for wine or splendidly crafted beer. Noshing for hours with Jim Henson would be such a Thanksgiving. First of all, the man is fascinating and brilliant, and his creativity and love of art go far beyond The Muppets, which is a kick-ass topic all by itself. Hell, I could talk to him about Labyrinth and The Dark Crystal for hours. DAYS. He is an amazing man and is infinitely inspiring to me. Jim Henson will never be truly gone far as I’m concerned. He is the salt that flavors a fertile earth from which creativity flourishes.

    My best friends all live in Minnesota, and I’m in Maine. Celebrating with them would be the ultimate Friendsgiving. Thank you for sharing how to make mashed potatoes plant-based–the dairy situation is the hardest part for me in thinking about changing my diet. But it’s totally possible! And the chipotle addition is boss.

    I would love one more meal with my Grandma as well. She was born in Czechoslovakia and was a bohemian master of all things creative. Despite being handicapped, she made the most beautiful, hand-tailored clothing (oh how I wish I could watch Project Runway with her-she’d love it & could whip them all!). She taught herself how to upholster furniture, make elaborate curtains, and plaster walls.

    She had a huge garden where she taught her 10 grandkids organic gardening before it was “in”. But it was in the kitchen where she really excelled, especially making the recipes from her family, like buchty aka “little sweets.”

    Her kitchen always smelled amazing and Thanksgiving was always a feast!

    I’d love to spend a Friendsgiving with my college girlfriends! They are loyal, supportive women who now live in different cities and states, too far away to get dinner with as often as I’d like!

    Wow–that is a stupendous recipe. I’d like to spend my Friendsgiving Day with my 2 greatuncles who both served in WWI, but never shared many of their war stories–not a problem, because they were both fascinating men who had plenty of other stuff to talk about.
