Episode 35: The Nitty Gritty On Gluten, Oil, And Soy With Dr. Thomas Campbell Of The Campbell Plan

This week’s podcast is pretty special. I had the opportunity to speak with the co-author of one of THE most influential books in health, wellness, and plant-based nutrition. It’s Dr. Thomas Campbell, who cowrote The China Study with his father, Dr. T. Colin Campbell. The book has sold over 1 million copies and inspired the film Forks Over Knives. Their work has transformed thousands of lives across the world, including my own. I’m pretty excited about this one!
Tom and I discuss why he needed to write his new book, The Campbell Plan, his thoughts on the hottest health topics out there – gluten, soy, and oil (you might be surprised to hear what he thinks), raising a healthy family, and the number one thing he says is vital in successfully changing your diet.

June 11, 2015Not even done listening and I love it. Changing tastebuds is SO true. I had bacon for the first time in forever the other day and really didn’t even like it! (Way too salty) thanks for this interview! My question though, how do I roast veggies with no oil?

June 12, 2015There are lots of ways to roast without oil. You don’t get the exact same texture but it is still delicious. One trick is to spray the veggies with veggie broth that you have seasoned – it is delicious. Also, roasting juicy veggies with dryer ones helps the overall end-product. Experiment with different temperatures in the oven. Like the adjustment of your taste with bacon, this takes a little getting used to. I now can’t get enough of oven roasted french fries!

Answering roasting veggies – I squeeze lemon on my some of my veggies when I roast and that is pretty good too!
Just put Dr. Campbell’s book on hold at the library! Can’t wait

June 15, 2015LOVE this podcast! Changing tastebuds is definitely a thing. My son used to HATE certain foods, but now since he is plant-based (at least at home), he is starting to like more vegetables! I am starting to limit oil, just because I think it is used WAY too often these days.

June 16, 2015I wasn’t crazy with the labeling of being the “weirdo” kid at the birthday party, school, etc. It’s not the image the plant based community wants portrayed on their children. Yes, my kids eat different than everyone else, but I think that’s great! They are proud to be vegan. I am thankful that my kids “choose” to have me make them a cupcake to bring to parties instead of eating the stuff they serve. In addition, there are kids with allergies that have to bring their own treats to parties, school, etc. I don’t see the big deal. I understand that everyone has to do what’s best for their child. Mine are not weird.
