Easy Whipped Cream With Chocolate + Five Pancakes To Put It On

For the last few weeks, I’ve been dreaming about making whipped coconut cream with chocolate chunks. I’m not kidding, I’ve thought about it once or twice a day. But I couldn’t figure out what to put it on. Cookies? Doughnuts? Pudding?
Then the other night, I mentioned my dreamy whipped cream concoction to my (also dreamy) beau, and he thought it sounded perfect for pancakes. PANCAKES! Yes, that was it.
So, I went and gathered some of the best pancake recipes from my favorite sites, below. Take your pick and then top with the coconut cream for a sweet breakfast (or dinner) treat!

{ Easy Whipped Coconut Cream With Chocolate }
1 can coconut milk, chilled overnight
1 tablespoon maple syrup
1/2 dark chocolate bar, cut into chunks
Sprinkle of sea salt
Take chilled coconut milk carefully from the fridge. Do not shake. The coconut cream and water will have separated, and you want it to stay that way. Open the can and scoop the coconut cream from the top into a small bowl. Add maple syrup and salt and use an electric mixer (or a fork really fast) to mix until stiff and creamy. Stir in chocolate chunks. Use as a topping for pancakes, ice cream, or chia pudding. YUM!
