Grilled Peanut Butter + Pomegranate Sandwiches

As we enter the home stretch of the holidays, there are recipes flying around everywhere: 8 Sugar Cookie Recipes Shaped Like Kittens!, 12 Flatbreads That Aren’t Actually Flat!, 169 Gluten-free, Dairy-free, Grain-free, Sugar-Free, Honey-free Paleo Vegan Stocking Stuffers! Don’t get me wrong, I’d click on a lot of those. I love lists of things, especially when they’re about stuff to eat. But right now, as I’m trying to figure out exactly how many diapers you need pack for a 5-day trip, realizing just now that I don’t actually have any clean clothes to pack, and pondering for the fiftieth time whether or not I should bring my computer with me (does anyone else debate this for hours?!)…all I want is simple food.
No five-part recipes (have you seen this cake?) and please, please nothing that reads “soak overnight.” I want something easy. I want to slap two or three ingredients together and still feel like I’m feeling festive.
These little sandwiches are it. They’re crunchy and gooey at the same time and are super easy to make. And the pomegranates just make them feel a little sparkly and holiday-ish. Wait. Rewind. I know you’re thinking that it’s not easy getting all those pomegranate seeds out. And I promised you easy. Turns out, it’s not as hard as you think (which was news to me too). Here are two methods (I like method one).
Gonna keep this short and sweet, because I really do need to go pack. But before I go, I want to wish you a very happy holiday. This week, snuggle with whoever will let you snuggle them. Give love to the person that needs it most. And watch as many NBA games with your Pops as you can (that’s what I’ll be doing on Christmas day).

{ Grilled Peanut Butter + Pomegranate Sandwiches }
1 pomegranate will make around 16 little sandwiches
Sprouted or gluten-free bread
Almond or Peanut Butter
Pomegranate Seeds
Coconut Oil
Spread a little coconut oil on one side of each slice of bread. Place bread oil side down and spread a tablespoon + a little more of your favorite nut butter and top with pomegranate seeds. Place another slice of bread, oil side up on top. Grill on medium heat until lightly browned, flip, and grill the other side. Cut into four pieces and serve immediately.
*I cut the crust off my sandwiches, but up to you if you want to add this step.
