One Ingredient, Five Ways: Lemons

One Ingredient, Five Ways: Lemons

I’ve said it before, and I’ll say it again – one of my dreams in life is to have a lemon tree in my backyard. To be able to wake up and pluck a little yellow dude to start the day would be so awesome. Before I changed my diet, I bought lemons maybe once a month. And they weren’t for making food, they were for making cocktails. Now, I go through 7-10 a week…for my morning lemon water, salad dressings, and lots of juices. When I don’t have any on hand, I freak a little because they’re such a part of my daily routine.

I think one of the reasons my body started craving them so much is that they’re so alkalizing, which helps your body get more balanced. Start off your day with some hot water and lemon and see what happens. I promise that after a week, you’ll feel a little change. There’s also evidence that lemons can whiten your teeth too. Spread the lemon love and make one of these recipes this week!

1. Fresh Veggie Quinoa with Lemon Tahini Dressing from Veggie And The Beast

2. Pan-Grilled Tomato Salad with Lemon Dressing from Real Simple (skip the cheese if you want to go d-free)

3. Lemon Cookies from The Vedge

4. Curried Red Lentil Soup with Lemon from Vegetarian Times

5. Honey Lemon Tea from Eating Well

I clearly love lemons. What’s your must-have?

I have to say potatoes. I know that for some people they are carb-ridden bombs of death, but to me they are comfort food, fuel and yum. Oh and the ultimate vessels for cheese. So versatile and so filling and just so damn yummy!

I am also a big lemon fan. I have a lemon tree in my yard, but it’s refusing to grow at the moment 🙁

I agree! One of my favorite meals is some redskins mixed with almond milk and horseradish over steamed kale. YUM. Sending lots of love to your lemon tree.

Never distract the lemon from his true mission in life – very dry Grey Goose martini with a twist.
