One Ingredient, Five Ways: Mushrooms

When I decided to choose mushrooms for One Ingredient, Five Ways, I got curious to see just how many different types of them were out there. So I started digging and found a crazy range (from 12,000-15,000), with one source even claiming 38,000. So…since we can’t get down to exacts, let’s just say there are lots for now. I know that mushrooms aren’t always the most handsome fellas in the produce isle, and sometimes they’re downright dirty (literally covered with it). But they do have awesome nutritional value – a great source of potassium, for one.
My friend Mel is the ultimate mushroom hater. And when she told me recently that she wanted to give plant-based eating a try, she also warned me that the poor ‘shroom was on her no-no list. So this post is dedicated to her, whether she likes it or not. Because all those Chanterelles, Oysters, Creminis, Buttons, and Shiitakes…they want to be your friend, Mel. Like, so bad.
