Raw Coconut Cacao Macaroons by Miss Renaissance

You remember Miss Renaissance aka Eva Daiberl, right? She hosted one of the first ever For Reals Meals AND created one of my most favorite recipes I’ve ever had on this site.
Eva has one of the most insanely stylish closets and homes I’ve ever seen. She always looks pulled together. She never has a bad hair day and can actually wear white all day long and not look like a total mess (this is not something I can do). Even her dog Fritz looks like he was pulled from the pages of a magazine. I kind of thought Eva was just a fashion-head that had a pretty blog…and that was kind of that. But I was wrong. Over this last year, I’ve gotten to know her, and she is one of the most thoughtful, introspective, and spiritual people I know.
She goes on week-long silent meditation retreats (no talking for a week!), is always listening to new inspiring podcasts, is launching a new workshop to help women (stay tuned!), and has really kept me grounded during this whole adoption process. She’s the real deal. She’s just plain awesome. I’m so thankful that she’s in my life. And it goes to show that you can’t judge a lady by her CĂ©line-bag-toting cover.
AND she’s also an incredible chef!! A trained pastry chef, actually. She created this recipe for herself and then was so kind to share it here. These little nuggets are ridiculously easy to make and so good tasting too. Thanks Eva!
{ Raw Coconut Cacao Macaroons }

1.5 Cups Unsweetened Fine Shredded Coconut Flakes, plus 2 Tablespoons for garnish
1/2 Cup plus 2 Tablespoons Raw Cacao Powder
1/2 Cup Maple Syrup
3 Tablespoons Virgin Coconut Oil
1 Teaspoon Vanilla Extract
Pinch of sea salt
Combine all ingredients in a food processor and pulse until well combined. Use a small cookie scoop to measure out each macaroon and drop onto a lined baking sheet or a large plate/platter. Sprinkle with remaining coconut flakes. Refrigerate and eat cooled. Can be stored in an airtight container in the fridge for up to 5 days.
OPP Notes:
** I subbed regular old cocoa powder for the cacao. If you can’t find cacao or it’s not in the budget, cocoa works great too. I also didn’t have a mini cookie scoop. I used a spoon. They for sure didn’t look as pretty as Eva’s…but man, they tasted just fine.
