Raw Spaghetti Marinara Sauce From Two Moms In The Raw

I’m a huge Two Moms In The Raw fan. I discovered their bars when I first changed my diet. Back then, I was a junk food/candy/sweets addict, and they were my little saviors during the big change. They gave me hope that I would still be able to eat delicious snacky things. I loved them so much that I ate them Cookie Monster-style, fast and messy. And because of that, I never really took the time to find out exactly who those moms were. 
 
Shari Koolik Leidich (Mom #1) started the company with her mom (Mom #2). After being diagnosed with MS, Shari tried the conventional-medicine route suggested by her doctors. But rather than help her, it made her feel even worse. So she decided to take her health in her own hands, read every book she could get her hands on, and find any possible solution that traditional medicine wasn’t offering. 

Based on what she found, she decided to go completely raw and eliminate gluten, dairy, and sugar for six months…and I’m guessing you might know what happened next. She began to feel better. She was able to manage her symptoms. And had less pain. But that’s not all that happened.

She realized there was a huge gap in the market for the kind of snacks and treats she craved with her new diet and lifestyle. So she began cooking and testing (and cooking and testing) to create snacks that not only she loved – but her family (hubby + three kids) loved, too. She was able to create some pretty great stuff. But her recipes weren’t just a hit at home. They gained a lot of popularity at her local farmer’s market. And then Whole Foods came knocking and things exploded. Her company, Two Moms In The Raw, was born. 

And now it’s like Christmas/my birthday all rolled into one for my belly…because there is a Two Moms In The Raw cookbook! It’s a completely gluten-free, raw, and cooked recipe book with a focus on meals and snacks that are anti-inflammatory.

I posted about Shari’s Chocolate Chip + Hemp Seed Cookie recipe on Instagram last week (they were so goooood!) but wanted to share a savory dish from the book, too. This raw marinara (Shari calls it marawnara) is so simple to make. And when I say simple I mean you throw everything in a blender and it’s finished. My kind of recipe! 

I really encourage you to get her book for your kitchen library. To me, it’s not just a cookbook. It’s a big book of natural medicine. Full of good food that isn’t just delicious, but actually designed to make you feel your very best. Powerful stuff. 

Just a note, there are recipes with meat in this book. Just a heads up to the diehard plant-eaters that have it in their Amazon carts ready to go. But take it from a fellow diehard plant-eater…buy the book anyways. There are more plants in the book than you’ll know what to do with (and you know you want that Chocolate Chip cookie recipe, c’mon). 

 { Spaghetti Marawnara }
    from Two Moms In The Raw

6 large Roma or 4-vine ripened tomatoes, coarsely chopped
3 garlic cloves, minced
1 medium shallot, chopped
2 oil-packed sun-dried tomatoes, drained and chopped
1 teaspoon fine sea salt
5 large basil leaves
2 teaspoons fresh oregano, chopped
3 tablespoons extra virgin olive oil
4 cups lightly cooked zucchini ribbons or cooked spaghetti squash

Combine all of the ingredients, except the zucchini or squash, in a blender and pulse until desired consistency. 

Serve with zucchini ribbons or spaghetti squash. 

Kitchen Notes: I added a little red pepper flake to my sauce to spice it up. And if zucchini noodles aren’t your thing, you could use rice noodles here too.

    Ha! I’ve been eating the Two Moms In The Raw bars for quite a while as well and just recently learned their story! Who’d have thunk 🙂
    I always pictured a mom and her daughter creating these bars even though the name says otherwise 🙂

    I can’t wait to get their book!!
