Flax mixture
- 1 tablespoon flax meal
- 3 tablespoons water
Filling
- 8 apples, peeled, cored, and sliced (peeling is optional, I like to do half and half)
- 2 teaspoons cinnamon
- 1/4 cup real maple syrup
- 1/4 teaspoon ground cloves
- 1 cup walnuts
Topping
- 1/2 cup maple syrup
- 1 teaspoon vanilla
- 1/3 cup applesauce
- 1 cup brown rice flour
- 1/2 cup almond meal
- 1/4 teaspoon salt
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 1/2 cup rolled oats
Instructions
- Preheat oven to 350ºF. Mix together flax meal and water, and place in the fridge to thicken.
- Peel half your apples, and then core and slice them all. In a medium-sized bowl, mix together your apples, cinnamon, maple syrup, clove, and walnuts until the apples are covered in the mixture. Spread the apples into a medium-sized baking dish.
- In the same bowl you used for the apples, mix together the wet ingredients for the topping — maple syrup, flax mixture, vanilla, and applesauce. In a large bowl, whisk together brown rice flour, almond meal, salt, cinnamon, baking soda, and rolled oats. Fold the wet ingredients into the dry. With your hands, take quarter-sized chunks of the topping, and place on top of the apples until they are covered.
- Cover with foil and bake for 30 minutes. Remove foil, and bake another 15 to 20 minutes until topping is browned. Don't let it cool. This tastes best served warm. Top with whipped coconut cream or almond ice cream.
