
Asian-Style Greens with Orange Miso Dressing

For The Veggies
- 2-3 spring or green onions, thinly sliced (light and dark parts)
- 2-3 green garlic scapes, minced (garlic scapes are long and curly and kind of impossible to cut; power through! They’re worth it.)
- ½ lb Chinese broccoli, chopped into 1-inch pieces
- ½ lb kale, both leaves and stems, sliced (keep leaves and stems separate)
- 2 tbsp coconut oil or vegetable broth
For The Dressing
- Juice of ½ small orange
- 1 tbsp yellow or white miso
- 1 tbsp rice vinegar
- ½ shallot, minced
- 1 tbsp raw honey or maple syrup
- ½ tbsp sesame oil (optional)
Instructions
- Heat coconut oil or vegetable broth in a heavy-bottom saucepan. When warm, add onions and garlic. Sautee, mixing occasionally, until softened. Add kale stems and sautee another few minutes. Add Chinese broccoli. Sautee until bright green, approximately 5 minutes. Add kale leaves and sautee until it reaches desired consistency (I like mine with a bit of crunch). Turn off heat. While stir fry sits, add all dressing ingredients in a mason jar and shake or whisk ingredients together in small bowl. Toss desired amount of dressing over stir fry. Enjoy!
