
Blueberry Skillet Cobbler

Ingredients
- 1 tablespoon mint, finely chopped
- Zest of one lime
- 1/2 cup + 1 tablespoon real maple syrup
- 4 cups blueberries (if using frozen make sure they are thawed)
- 1 cup almond meal flour
- 1/2 cup brown rice flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 3/4 cup almond milk
- 1 teaspoon vanilla
- 2 tablespoons coconut oil (melted) + some to grease the skillet
Instructions
- Preheat oven to 350 degrees. Mix lime, mint, blueberries, and 1 tablespoon of your maple syrup in a bowl and set aside.
- Grease a 10 1/2 inch skillet with a generous amount of coconut oil and place in the oven for 5 minutes.
- Combine flours, baking powder, and salt in a large bowl. Whisk in the almond milk, remaining maple syrup, and vanilla. Stir in the coconut oil.
- Pour batter into the hot skillet. Top with the berry mixture. Bake until the batter has browned around the edges around the fruit (about 35 minutes). Let cool and top with coconut cream. YUM!
