Strawberry Chia Jam
- 2 cups fresh or frozen strawberries (defrosted)
- 2 tablespoons chia seeds
- 1 teaspoon of lemon juice
- 2-4 teaspoons of maple syrup (depending on how sweet you like it)
- Blend strawberries in food processor or blender to desired smoothness (blend for less time to leave larger chunks for a true jam). Pour strawberries into a mason jar or bowl. Add the chia, lemon juice, and maple syrup. Stir until all of the chia is blended. Cover and place in fridge. Let sit for a few hours so the chia can expand (although sometimes I eat right away). Enjoy!
