Soba Slaw With Thai Almond Butter Sauce by Whole Living Lauren

I was able to whip up this little diddy in about 15 minutes (my favorite kind of recipe). It’s easy, delicious, and a perfect example of the excellentness you’ll find on her new site.

This delicious slaw is a favorite in my house. The combo of noodles and veggies smothered in a spicy almond sauce…heavenly. Buckwheat soba noodles are 100% whole grain, high protein noodles that offer a rich and warming flavor. They provide healthy fiber, protein, and complex carbs and take only minutes to make. The cabbage and raw carrots add crunch, and the almond sauce makes for an amazing dressing packed full of flavor. This dish is hearty enough for a main dish and also makes a great packed lunch the next day. This recipe makes a lot, so feel free to cut it in half. I prefer to serve the slaw cold, but my husband likes it warm. Either way is delicious!

{ Soba Slaw With Thai Almond Butter Sauce }

1 package buckwheat soba noodles
2-3 cups shredded red cabbage
1-2 cups grated carrots

For the sauce
3 tablespoons Tamari or Braggs Liquid Aminos
3 tablespoons red wine vinegar
1 tablespoon sesame oil
2 garlic cloves
3 tablespoons natural almond butter
2 teaspoons red Thai chili paste
1-2 tablespoons unsweetened almond milk

Garnish with
2-3 fresh scallions, chopped
2-3 Tbsp unsalted roasted peanuts (optional)
½ cup steamed edamame (optional)

Cook the soba noodles (about 7-10 minutes) in boiling water.

While the noodles are boiling, make the sauce by combining all sauce ingredients in a blender until smooth.

Drain and rinse the noodles. Transfer noodles to a mixing bowl. Mix in shredded cabbage and grated carrots. Gently mix sauce into noodles and vegetables. Sprinkle with scallions, steamed edamame, and chopped peanuts. Enjoy!
